Off/Cuts is a new digital food and drink "magazine" featuring stories focused on under-covered people and ingredients. No celebrity chef profiles, no basic recipes, no listicles, and no clickbait. For our first issue, we're excited to showcase quality journalism from both established writers and new voices.
That mix of diverse voices has led to an exciting first batch of stories. We have a personal exploration of (too oft-ignored) Pakistani cuisine from Pakistani-Canadian writer Hina Husain that's best enjoyed over a breakfast of halva puri. Over lunch, join Eddie Cepeda as he returns home to El Paso, Texas to get to the bottom of a cheese controversy at a beloved border town fast food spot. And for dinner, sit down for family meal with writer Catherine Chen and chef Martin Mendoza, a Mexican immigrant who has risen to become an Italian chef in New York—be warned, this is not your everyday profile. Then, grab a glass as one of America's leading sake brewers, Byron Stithem, takes you behind the scenes and into his mind at an American sake conference in Old Town Sacramento, California.
Finally, there's our virtual "back page" where British writer Victoria Stewart imagines a meeting of some truly unlikable characters planning what will somehow probably be the hottest new restaurant in London.
Hope you enjoy!
